Mr. Speaker. the city of Pleasanton in Alameda County. Calif.. is extremely proud of a unique institution called the Cheese Factory. Now celebrating its 50th anniversary. I would like to insert in the CONGRESSIONAL RE cORD a history of the Cheese Factory for the edification of my colleagues. The Cheese Factory was founded in 1920 when a Greek immigrant. Deimitrios Voultsides settled in Pleasanton. Equipped only with his trade as a master cheesemaker. Jimmy. as he became affectionately known. was determined to show the New World the delectable cheese varieties held captive by the Old World for so many years.
